These enchiladas breakfast casseroles are filled with ham, vegetables, and cheese, baked together in a creamy egg batter. This is by far the best enchiladas breakfast meal I have ever made. EVERYONE loved it. We had a birthday party and friends came over for brunch. I found this recipe when I was looking for something different to make. We were getting tired of the same old breakfast casseroles.
So I came up with some ideas I added 1 tbsp green chili into the ham mixture, you can judge for yourself the amount you want to use. I also put cheddar and jack cheese in it, you can use your own favorite cheeses in it. I used red pepper alone with the green then pour the egg mixture over all the enchiladas so they were completely wet.
Cover them with foil and cook them for 50 minutes, remove the foil and sprinkle the top with cheese. Return them back in the oven with out the foil until the cheese is melted and bubbled. Served them with sour cream ,salsa.

Ingredients:
1 pound cooked ham chopped, 3/4 cup sliced green onions, 3/4 cup chopped green bell peppers, 3 cups shredded cheddar cheese divided, 10 (7 inch) flour tortillas, 5 eggs beaten, 2 cups half ana half cream, 1/2 cup milk, 1 tbsp all purpose flour, 1/4 tsp garlic powder, 1 dash hot pepper sauce.
COOKING DIRECTIONS: Place ham ham in food processor, and pulse until finely ground. Mix together ham, green onions, and green bell peppers. Put in 1/3 cup of ham mixture, 3 tbsp shredded cheese onto each tortilla, then roll them up. Place filled tortillas, seam side down, in a 9 by 13 inch greased baking dish.
Mix together in a medium bowl eggs, cream, milk, flour, garlic powder, and hot pepper sauce. Pour egg mixture over tortillas . Cover, and refrigerate overnight. The next morning , preheat the oven to 350 degrees bake uncovered, in preheated oven for 50 to 60 minutes, or until set. Sprinkle casserole with remaining 1 cup shredded cheese. Bake 3 minutes or until cheese melts. Let stand at least 10 minutes before serving.
